Summer is finally here, and I’m so ready. Cooking inside our boat is like being in a sauna, so salad and outdoor grilling are how we roll! I love my salads. I enjoy mixing flavors with sweet, sour, savory, salty, and crunchy to take them to the next level. Simple touches that leave you pleasantly surprised and uniquely satisfied!
Let’s get started…
Ahi Poke Bowl & Tany Salad
This recipe can be made with ahi or fresh wild-caught salmon. Both are delicious. Just make sure it is sushi grade. The cauliflower rice is delicious and makes the salad crunch!
Authentic Ceviche
While in high school, we went to Isla Mujeres, and this delicious dish, ceviche, was served daily at sunset, along with turtle steaks, rice, and beans.
Anne’s Zippy Fennel Salad
Just look at this! It’s simple, fresh, and a must-have summer salad…for me, I made it the last two weeks for lunch over a bed of field salad. Use the fruit in season, pink grapefruit or tangerines, instead of blood oranges. Add some cold shrimp if desired. This is just delicious and refreshing.
Tangy Apricot Salad
This is one of the best salads I’ve had. Tangy and sweet with a touch of sour sun-dried tomato pesto. It is the perfect salad for a hot, sunny day!
Mango Salsa
Woo, it’s just so yummy. Yes, it is a salsa, but you will also love eating by the spoonfuls as a main course. This was easy and tangy, with sweet peppers and a whiff of the summer. Use it as a side to your Mexican, Indian, or seafood dishes.
Caesar Salad & Easy Dressing
This dressing is the easiest way to make Caesar dressing. There is no fuss. Add the premade mayo and ingredients to your immersion blender, and bang! Topped off with gluten-free homemade seasoned croutons, it just makes the crowning touch!
Chopped Asain Chicken Salad
AMAZING! Yes, this is always a weekly meal. Sometimes, I change up the chicken for tuna or shrimp. It’s delicious with my homemade mayo, fresh grapes, apples, and more. Love a crunchy salad? Here, it is at your fingertips.

I'm Melinda Stevens and living the life of a beach bum was inevitable since my father was a lifeguard for the city of Los Angeles. My memories of growing up on John Street in Manhattan Beach, California were filled with joy, excitement and adventures; until my world, as I knew it, fell apart when we moved to Del Mar, California. My father was offered the position as Captain of the lifeguards and we started the slow migration to the small deserted stretch of beach in 1963. At twelve years old, this seemed like the end of my life. Remember, I’m writing with clear hindsight now, ok somewhat clearer… Little did I know this would be the beginning of a new journey and give a bit more clarity to many of the events that led me to this new cooking adventure.
