This was a Godsend. Cooking bread on my boat is not impossible since I’ve done it often, but this recipe beats them all when traveling or hanging out in an Airbnb for a holiday. They will be my go-to when I am home as well.
I found this recipe online, but a few steps were missing, and some measurements for ingredients were not listed. So, after some trial and error, I got it and now can’t stop making these yummy rolls. Try them yourself and prove me wrong! They are amazingly delicious.
This recipe makes eight small dinner rolls or three large hamburger buns! If making the hamburger buns, divide the dough into three equal pieces. Pate them down to 1/2 thick. They rise beautifully. I made them the day before and let them cool. Then, I placed them in an airtight container until the next day. If desired, you can toast them on the grill or toaster, but it is unnecessary because they stay moist and soft.
You will need a day to soak the chickpeas, so start now!
Herb Chickpea Rolls
Ingredients
- 100 gm of dried chickpeas (not canned). Place the chickpeas in a bowl and cover with water for 24 hours.
- 2 Tsp of herb spice (your choice)
- 1/2 tsp of salt.
- 2 Tbsp of olive oil
- 2 Tbsp of phylum powder
- 1 tsp baking soda
- 1 tsp of apple cider vinegar or balsamic vinegar
- 100 ml water
- sesame seeds (optional or large salt flakes)
Directions
- Step 1 Heat a toaster oven or your conventional oven to 360 degrees
- Step 2 Rinse the soaked chickpeas, place them in a food processor or blender, and beat until mashed. Scrape the sides often.
- Step 3 Add the herb spice and salt to taste and olive oil and blend for 1 minute more, scraping the sides often.
- Step 4 Mix the vinegar and baking soda in a small dish and add to the blender and beat for 1 minute.
- Step 5 Add 100 ml of water and phylum. Continue blending until smooth, scraping the sides often.
- Step 6 Place the dough onto a sheet of baking paper and knead a few times to ensure the phylum, spices and ingredients are mixed well.
- Step 7 Shape the dough into an oval tube and slice it into eight equal pieces. Form the pieces into small rolls with oiled hands.
- Step 8 Press a few seeds and salt flakes into the tops of each roll and use a knife to make two horizontal slits(optional).
- Step 9 Place the baking paper and the rolls on a baking tray and cook for 30-40 minutes or until brown. The hamburger buns will take 45-50 minutes to bake.
