Ingredients
  • 1 batch of kale deveined, washed, and torn into pieces. Don't forget to do my trick!
  • 1/4 purple cabbage
  • 1/4 white cabbage
  • 1 medium carrot
  • 1 small red onion
  • 1 medium apple
  • 1/2 cup virgin oil
  • 1/4 cup white balsamic vinegar
  • 1 grated clove of garlic
  • Salt and Pepper
  • 1/2 cup pecans
  • 1/2 cup crumbled Blue Cheese or Roquefort Cheese
  • Croutons
Directions
  • Step 1 Slice the cabbage, carrot, onion, and apple with a knife or mandoline. Place these at the bottom of your salad bowl.
  • Step 2 Place the oil, vinegar, grated garlic, salt, and pepper in a glass jar. Give it a shake! Pour this over the sliced cabbage, carrot, onion, and apple. You can leave it in the fridge if you want to marinate the veggies a bit, but it’s not necessary!
  • Step 3 When ready to serve, add your kale and toss to mix well with the marinated veggies and dressing. Sprinkle the top with nuts, crumbled cheese, and croutons (gluten-free, of course). Toss again just before serving. Enjoy!
