We eat salad every night and have a few that are our top picks, but when kale season comes around, that is it, while it lasts. I am a crunchy salad eater who needs texture in my salads, so if you’re like me, this is your next favorite salad. It’s super easy and filled with happy dances on your tongue and lots of crunch.

Crunchy Kale Salad

Ingredients
- 1 batch of kale deveined, washed, and torn into pieces. Don't forget to do my trick!
- 1/4 purple cabbage
- 1/4 white cabbage
- 1 medium carrot
- 1 small red onion
- 1 medium apple
- 1/2 cup virgin oil
- 1/4 cup white balsamic vinegar
- 1 grated clove of garlic
- Salt and Pepper
- 1/2 cup pecans
- 1/2 cup crumbled Blue Cheese or Roquefort Cheese
- Croutons
Directions
- Step 1 Slice the cabbage, carrot, onion, and apple with a knife or mandoline. Place these at the bottom of your salad bowl.
- Step 2 Place the oil, vinegar, grated garlic, salt, and pepper in a glass jar. Give it a shake! Pour this over the sliced cabbage, carrot, onion, and apple. You can leave it in the fridge if you want to marinate the veggies a bit, but it’s not necessary!
- Step 3 When ready to serve, add your kale and toss to mix well with the marinated veggies and dressing. Sprinkle the top with nuts, crumbled cheese, and croutons (gluten-free, of course). Toss again just before serving. Enjoy!



I'm Melinda Stevens and living the life of a beach bum was inevitable since my father was a lifeguard for the city of Los Angeles. My memories of growing up on John Street in Manhattan Beach, California were filled with joy, excitement and adventures; until my world, as I knew it, fell apart when we moved to Del Mar, California. My father was offered the position as Captain of the lifeguards and we started the slow migration to the small deserted stretch of beach in 1963. At twelve years old, this seemed like the end of my life. Remember, I’m writing with clear hindsight now, ok somewhat clearer… Little did I know this would be the beginning of a new journey and give a bit more clarity to many of the events that led me to this new cooking adventure.
