Ingredients
  • 4servings Cooked Quinoafollow the directions on the package
  • 1tsp Mexican seasoningin the water for the Quinoa
  • 1small diced fresh jalapeƱoOptional
  • 110-15 diced cherry tomatoesor a medium tomatoes
  • 1/2red diced onionor green onion
  • 1/2juiced fresh lemon juice
  • 1/2juiced fresh lime juice
  • 1batch of diced cilantro
  • himalayan salt & fresh pepperto taste
  • 2Tbsp organic olive oildrizzle on top!
  • dash of Mexican SeasoningOptional
Instructions
  1. Cook the Quinoa as directed on the package for 4-6 people. In the water add 1 tsp of Mexican Seasoning.
  2. Dice the tomatoes.
  3. Dice the onion.
  4. Dice the cilantro and jalapeno.
  5. Place all the ingredients into a serving bowl.
  6. Squeeze the juice from 1/2 a lemon and from 1/2 a lime over the top. Drizzle a tablespoon or more over the top. Add salt and pepper to your taste.
  7. Give it a toss and enjoy! This is best eaten fresh.
