Mustard Pumpkin Seed Brussel Sprouts

Ingredients
  • 1-2pounds Brussel sproutswashed and steamed
  • 1/2package diced organic baconif using organic add a tsp of avocado oil
  • 1/4 Bacon greaseretain the oil from frying bacon
  • 2 diced green onions
  • 1/4cup balsamic vinegar
  • 1Tbsp Dijon Mustard
  • 1cloves chopped garlic
  • 1tsp honey
  • himalayan salt & fresh pepper
  • 1/4cup organic cranberries
  • 1/4cups pumpkin seeds
  • 1/4cup grated parmesanOptional
Instructions
  1. Wash and cut the Brussel sprouts in half. Steam them in a large saucepan until tender.
  2. Meanwhile, fry your bacon and retain the grease. Don’t forget you might have to add avocado oil if you’re using organic bacon. Set it aside on a paper towel to drain.
  3. Place the diced green onions, balsamic vinegar, mustard, garlic, and honey in a small saucepan and simmer with salt and pepper.
  4. Place the steamed Brussel Sprouts in a large serving dish.
  5. Sprinkle the reserved bacon grease over the top of the Brussel sprouts. Give it a good toss.
  6. Add the cranberries and pumpkin seeds. Give it a tood toss.
  7. Add the drained diced bacon and toss it again!
  8. Drizzle the mustard sauce over the Brussel sprouts and incorporate all the goodies with another toss.
  9. IĀ used a bit of parmesan on the top but this is definitely optional. I hope you enjoy it as much as we did! Sprinkle the top with parmesan cheese if using. This is really not necessary. I served my portion without the cheese and it was AMAZING!
  10. Place under the broiler and cook until the dish is bubbling or the parmesan cheese is melted and bubbling, about 15 minutes. You can also place this dish in the oven at 350 degrees and bake slowly for 30 minutes.
